    • Cider gave those of us involved in making "Sagardoa Bidegile" (Cider Stories) the chance to go on a trip full of pleasant surprises. It was a physical journey because not only did we visit almost every corner of the Basque Country, we crossed the Atlantic, too; but apart from that, cider afforded us the opportunity to go on a trip that turned out to be historical, anthropological, cultural, and, it goes without saying, gastronomic.
      I say it was a trip full of surprises for the following reasons: we came across many women, many in senior positions, in a world that we thought traditionally belonged to men; cider is produced nearly everywhere in the Basque Country, even though today we think it is only made in a particular area of Gipuzkoa; not so long ago cider not only enabled Basque farmers to live healthy lives but also determined the very structure of the farms; today, its ancient past offers the key to success beyond Basque borders; it has the capacity to draw young and old alike around the same table; and despite having ancient roots stretching back into the past, research and technology are indispensable tools for cider.
      Cider enabled the camera to visit peaceful countryside, hushed archives and cider cellars, and noisy bars, festivities, concert halls and kitchens until a minute-by-minute story brimming with contrasts had been produced.
